2 garlic heads, divided into cloves
1/2 cup of chopped fresh parsley
1 2-inch piece of ginger root, peeled and minced
1 pint of apple cider vinegar
2 tbsp. Honey, or to taste
Blend the garlic and the vinegar in a blender until the garlic is broken up. Transfer the mixture to a large wide-mouthed jar or container and add the ginger and parsley. Cover and allow to stand for 2 weeks. Strain the herbs and discard them. The vinegar can be sweetened to taste, if desired. Take up to 3 teaspoons daily.
